Ingredients

Instructions

  1. Measure and blend together oat bran, soy flour, psyllium, baking powder, ground almonds, cinnamon, and salt.

  2. Measure brown sugar, soy milk, vanilla, and apple in a separate bowl.

  3. Combine wet with dry ingredients and mix thoroughly.

  4. Portion the batter into greased or paper lined muffin pans. Garnish with sliced almonds.

  5. Bake at 375°F for 20-25 mins or until golden brown.

  6. Top with 1 tsp margarine before enjoying.

Note

  • Psyllium and soy flower are available at bulk stores, health stores, and grocery health food sections.
  • You can substitute the grated apple for 1/2 cup unsweetened applesauce.
