Instructions

  1. Sauté onions in oil using a fry pan until opaque. Add eggplant, garlic, and tomato. Simmer until vegetables are cooked.

  2. Add meat grounds, barley, tofu and herbs. Continue cooking for 3-4 mins. Let cool.

  3. Toast bread. Spoon barley mixture on toast. Garnish with fresh parsley.
