Barley Mushroom Casserole

Sauté onion, celery, and green pepper in oil until soft.

Add barley to one side, and brown lightly.

Combine all together and pour into a casserole (greased with non-stick cooking spray).

Add stock, mushrooms along with their juice, salt, and pepper. Cover and bake at 350°F for 45 mins.

Uncover and sprinkle almonds over top. Bake for another 15 mins or until all liquid is absorbed.
Note
- Barley is available at bulk stores, health stores, and grocery health food sections.
- To roast almonds, place them in a preheated 350°F oven, stirring once or twice.
