Ingredients

Instructions

  1. Sauté onion, celery, and green pepper in oil until soft.

  2. Add barley to one side, and brown lightly.

  3. Combine all together and pour into a casserole (greased with non-stick cooking spray).

  4. Add stock, mushrooms along with their juice, salt, and pepper. Cover and bake at 350°F for 45 mins.

  5. Uncover and sprinkle almonds over top. Bake for another 15 mins or until all liquid is absorbed.

Note

  • Barley is available at bulk stores, health stores, and grocery health food sections.
  • To roast almonds, place them in a preheated 350°F oven, stirring once or twice.
