Bean & Mushroom Burger

Over medium heat, sauté onion and garlic in 1 tbsp oil, for ~3-5 mins.

Add green onions, cumin and mushrooms and cook for ~5 mins. Add a little
more oil if needed. -
Mash or blend pinto beans until smooth and combine with the cooked onion
mixture. -
Add parsley, pepper and salt to taste. You can add toasted oat bran for
crunch here if you like. -
Shape the mixture into burger patties.

Heat 3 tbsp of oil in a pan and cook the burgers for ~3 mins per side.
