Instructions

  1. In a pot, add olive oil, onion, bell pepper, eggplant, and garlic. Sauté for 4-5 mins, until soft.

  2. Add tomato puree or diced tomatoes, salt, paprika, cumin, chili powder, cinnamon, cayenne pepper (optional). Stir to combine.

  3. Bring to a simmer over medium heat and cook for 2-3 mins, stirring
    frequently.

  4. Add chickpeas and veggie meat grounds. Stir to combine. Then reduce heat to medium-low and simmer for 15-20 mins.

  5. Serve over cooked barley.
