Instructions

  1. To a food processor, add the chickpeas, peanut butter, almond and vanilla extract, salt, psyllium husk, and soy milk.

    *Adding the chickpeas 1 tbsp at a time may result in a thicker consistency.

  2. Puree until the mixture is smooth, then add sweetener and more soy milk, if needed.

  3. Transfer mixture to a bowl, and fold in the chocolate chips.

  4. Serve as is, or top with nuts and fruit. Eat right away or store in fridge for at least 2 hours.

Note

  • The hummus will thicken in the fridge.
  • A good quality food processor is required to blend well.
