Ingredients

Instructions

  1. Remove the pits from the dates. Place in food processor.

  2. Add rolled oats, peanuts, walnuts, chia seeds, psyllium fibre, cocoa powder and vanilla extract to food processor and blend until mixture has combined.

  3. Slowly add soy beverage to the mixture and continue blending until a smooth dough-like consistency.

  4. With a small spoon scoop the mixture; dust the dough with almond meal and roll into 24 balls.

  5. Store energy bites in an airtight container in the refrigerator until serving.

Note

  • 2 bites = 1 serving
  • For extra zing, add 2 tsp orange zest.
  • Keep energy bites in an air-tight container in the refrigerator for up to 2 weeks.
  • They can be frozen for up to 3 months.
