  1. In a microwaveable dish, microwave frozen edamame and corn for 3-4 minutes or until cooked. Rinse with cold water to cool.

     

  2. Meanwhile, combine the red pepper, tomato, and cilantro in a medium-sized bowl. Stir in the cooked edamame and corn.

     

  3. In a small bowl, whisk together the lime juice, olive oil, maple syrup, salt, garlic powder, and chili powder to make a dressing.

  4. Pour the dressing over the salad and stir until combined.

  5. Divide salad into 4 servings and top each serving with ¼ of the avocado and 1 tbsp of pumpkin seeds. 1 serving equals 1¼ cups

  6. Enjoy right away or allow the flavours to come together in the fridge before eating. Store in an airtight container for 3-4 days.
