Instructions

  1. In a small bowl, mix together all ingredients for feta tofu except tofu.

  2. Marinate tofu with the mixture and refrigerate for at least 1 hour.

  3. In a small bowl, add all ingredients of vinaigrette dressing. Whisk well until the ingredients are incorporated.

  4. In a large bowl, toss salad with vinaigrette dressing and top with feta tofu and mixed nuts.

Note

  • To store the feta tofu, place tofu in an air-tight jar and cover with olive oil. It can be preserved for 2-3 weeks.
  • Add other herbs and chili to the feta tofu to your liking.
