Remove the pits from the dates and place in food processor.

Add rolled oats, walnuts, chia seeds, psyllium fibre, lemon zest, lemon juice and vanilla extract to food processor and blend until mixture has combined.

Slowly add soy beverage to mixture and continue blending until smooth dough-like consistency.

With a small spoon scoop the mixture into 24 balls; dust the dough with almond meal and roll into balls.

Store energy bites in an airtight container in the refrigerator until serving.
