  1. In a large saucepan, heat oil over medium until hot.

  2. Add garlic and sauté until golden brown (~4 mins).

  3. Add zucchini and cook until tender but still firm (~5 mins).

Note

  • Can be safely kept in the fridge for up to 3 days. Does not freeze well once fried.
