Instructions

  1. Heat a large skillet or wok over medium heat.

  2. Add oil, peppers, onions, and potatoes and sauté for 3 to 4 mins.

  3. Add tomato, curry powder, and crumble tofu. Mix well and simmer for another 3 mins.

  4. Garnish with almonds over top.

Note

  • Crumble tofu with your fingers.
  • To roast almonds, place in a preheated 350°F oven, stirring once or twice.
