Instructions

  1. In a blender or food processor, add all ingredients of peanut butter spread; blend until smooth and combined.

  2. To assemble: for each wrap, lay one collard green leaf flat, spread 1 tsp of peanut butter spread and 1 tbsp of mashed chickpeas evenly on the half lengthwise of the leaf. Sprinkle 1⁄2 tsp of sunflower seeds and fill with red pepper, apple, carrot, and tofu strips lengthwise and roll. Cut in half.

  3. Repeat with remaining leaves. Serve immediately.

Note

  • The wraps can be stored in the fridge for up to 2 days.
